The fish farm was established in 1968 on the Laßnitzbach, about one kilometer east of Murau. Clear water from nature guarantees the best living conditions for the trout. The trout mature from the egg stage in the hatchery to the seedling stage in the fish farm in the associated ponds to become ready-to-eat fish. Josef Klünsner, the fish master, knows all about the special characteristics, life requirements and utilization possibilities of the trout. Thus, they are known far beyond the district of Murau with their quality products.

Schwarzenberg's smoked trout and smoked trout fillets are smoked in the noble smoke of domestic hardwoods, resulting in their mild and spicy aroma. A special smoking oven guarantees consistent quality during the elaborate smoking process.
